Sauvignon Blanc is harvested first, in August, partially destemmed, and macerated for five weeks. During maceration, a small portion is gently pressed and the juice is added back to the fermenting mass. Merwah is harvested later, in October, and macerated for three weeks. After pressing, it is blended with the Sauvignon Blanc.
