Vinification: Harvested by hand the first week of September. Whole bunches are naturally dried, destemmed without crushing. Spontaneous fermentation takes place in stainless steel tanks with its own indigenous yeasts, followed by 10-day maceration until the fermentation stops naturally. After the fermentation stops naturally and the lees are removed, the wine is placed in a stainless steel tank, where it is naturally clarified and stabilized.
