Aged: Limestone and clay loam.

Vinification: Alcoholic fermentation occurs spontaneously with native yeasts in open oak foudres. The wine is aged for 24 months in 3,000-liter foudres, followed by an additional 12 months in bottle before release. Bottled unclarified, unfiltered, and with no added sulfites.



 

All the Facts

It comes from very pure calcareous soils of a variety that technically has nothing in common with the more well-known Riesling.
It's a powerful yet balanced white wine, mineral and with very prominent fruit. When you first open it, it might seem a little reductive, but give it a couple of minutes to open up in the glass. It's best enjoyed slightly chilled.
