Vinification: Made from directly pressed Savagnin grapes, the wine is first aged in 15 hl foudres before being blended with an oxidative barrel from the 2022 vintage, resulting in a finely balanced oxidative character. The nose reveals aromas of fresh walnut, dried apple, and subtle curry-like spice. On the palate, it is layered and saline, driven by vibrant energy and a persistent tension that keeps the wine focused and lively without becoming heavy. A perfect match for aged cheeses or creamy poultry dishes.

As someone is still trying to understand natural wine, this was exactly the wine store I needed to visit. The owners were superb, welcoming me as if I was a local. I heard all about the natural wines in Spain, some of the history behind them and their creators. And I walked out the door with a few of the local natural wines under my arm (to take back to Australia). Cannot recommend enough if you’re looking for Spanish natural wine!!
