Vinification: Destemming is partial and depends on the vintage; We add between 20% and 50% of the whole bunch. The percentages of red and white grapes vary depending on the vintage; In the warmer ones, we add more white to refresh the Cencibel, with a proportion that ranges between 10% and 50%.Total maceration for 40 days. Malolactic fermentation and aging for 8 months in 200-liter clay jars and in used 225 and 500-liter barrels
