Vinification: In order to make it, we play with the different maturations of the variety. We make two harvests of the same strains. The first harvest is around 11°, to achieve the grape's own natural acidity and the freshest, citrus notes of the variety. By removing part of the load from the vine, the grapes that remain ripen much better. Subsequently, we went on to pick the second part of the grapes with a probable alcoholic strength of about 13°. Next we put the two parts together. So, what we get with this wine is the maximum expression of the variety, the Yin and Yang of white grenache.

As someone is still trying to understand natural wine, this was exactly the wine store I needed to visit. The owners were superb, welcoming me as if I was a local. I heard all about the natural wines in Spain, some of the history behind them and their creators.
