Vinification: Made using the traditional ancestral method, it undergoes a single fermentation process and is pressed directly. The wine is aged in the bottle on its lees for at least 5 months, which imparts a rich, complex flavor. It is bottled without filtration or clarification, preserving its purity and natural characteristics.

This wine, from the 2022 vintage, is a true expression of natural winemaking, with only 1,000 bottles (75 cl each) produced. The vineyard uses a double Guyot arch training system, and each plant produces just 3kg of grapes. The wine is crafted without any additives, making it 100% natural and free from sulfites. This sparkling wine is a celebration of minimal intervention, offering a unique taste that reflects its terroir and the craftsmanship of natural winemaking.

What a wonderful little wine shop! Was given extraordinary and honest guidance to choose a wine that fit what I was asking for. As someone is still trying to understand natural wine, this was exactly the wine store I needed to visit. The owners were superb, welcoming me as if I was a local. I heard all about the natural wines in Spain, some of the history behind them and their creators. And I walked out the door with a few of the local natural wines under my arm (to take back to Australia). Cannot recommend enough if you’re looking for Spanish natural wine!!
