Extra Fact: Its name, "Conciliabulle," is a play on words combining "conciliabulo" (secret meeting) and "bulle" (bubble). It's a sparkling wine with very fine and persistent bubbles, a complex nose with aniseed notes, and a refreshingly cool palate.

On the nose there is grapefruit, lemon, pineapple and mint. In the mouth it is very lively, mineral and then it feels rich in matter, long, citrus and saline. Very gastronomic. It lasts well for 4-5 hours in an open bottle.

What a wonderful little wine shop! Was given extraordinary and honest guidance to choose a wine that fit what I was asking for. As someone is still trying to understand natural wine, this was exactly the wine store I needed to visit. The owners were superb, welcoming me as if I was a local. I heard all about the natural wines in Spain, some of the history behind them and their creators. And I walked out the door with a few of the local natural wines under my arm (to take back to Australia). Cannot recommend enough if you’re looking for Spanish natural wine!!
