Vinification: Harvested by hand, rigorously selecting bunches at the vine. Short maceration with whole bunches in stainless steel tanks, where fermentation begins naturally and spontaneously, without the addition of yeast or any other product. The fermentation temperature is not manipulated, but the cool autumn nights are exploited (the winery is located at an altitude of 1,280 meters). Aged for one year in European oak barrels in an underground cellar. Malolactic fermentation also took place naturally during the aging period. No sulfur dioxide* or any other additive or preservative was used. Unclarified. Lightly filtered before bottling to prevent the entry of solid particles.

Varetúo is made with grapes produced by just over 3,000 vines planted in 1996 in three different areas of the Barranco Oscuro estate, at an altitude of approximately 1,280 meters, on shale and clay soils. The vineyard is trained on trellises using a double-cordon royat system. Yields around 30 hectoliters/hectare
